Fried rice is the practical dish every local kitchen falls back on, and Spam is the pantry staple that makes it local. Diced and browned until the edges crisp, it turns plain fried rice into something worth making on purpose, not just to use up leftovers.

Cold, day-old rice is non-negotiable here — fresh rice steams instead of frying and turns the whole pan into mush.

How fo’ make ’um

  1. Heat 1 tablespoon oil in a wok or large skillet over medium-high heat. Fry the Spam until the edges are browned and crisp, about 4 minutes. Remove and set aside.
  2. Add the remaining oil to the pan, pour in the eggs, and scramble lightly until just set but still soft. Remove and set aside with the Spam.
  3. Add the onion and garlic to the pan and sauté until fragrant, about 1 minute.
  4. Add the cold rice, breaking up any clumps with the back of a spatula. Toss and fry 3–4 minutes, letting it pick up a little color at the edges.
  5. Return the Spam and egg to the pan, add shoyu, oyster sauce, and sesame oil, and toss everything together until evenly coated and heated through.
  6. Fold in the green onion, taste and adjust the shoyu, and serve hot with furikake on top if using.

Local tips

  • Cold rice fries instead of steaming — spread fresh rice on a tray and chill it if you don't have leftovers.
  • Don't crowd the pan; fry in two batches if your skillet is small, or the rice steams instead of crisping.
  • Frozen peas and carrots, tossed in with the onion, round this out into a full meal.
